  • 3 tbsp Organic Black Chia Seeds
  • 1 shot (approx. 1.5oz) Chilled Espresso or Ristretto
  • ¾ cup Unsweetened Chocolate Soy Milk
  • 1 tsp Raw Cacao Nibs (for texture and extra magnesium)
  • 1 tsp Pure Maple Syrup (optional, to balance the espresso's bitterness)
  • 1 pinch Himalayan Pink Salt
  1. Extract & Chill: Brew your espresso and allow it to cool to room temperature. Adding hot liquid directly to chia seeds can cause them to clump prematurely.
  2. Combine: In your glass vessel, whisk together the chilled espresso, chocolate soy milk, maple syrup, and pink salt until the mixture is a uniform mocha color.
  3. Hydrate: Rain in the chia seeds and cacao nibs. Stir vigorously for 60 seconds. The nibs will initially float but will become suspended as the gel forms.
  4. The Interval Stir: Let the jar sit for 10 minutes. Stir once more to ensure the seeds haven't formed a "crust" at the bottom of the espresso-heavy base.
  5. Set: Refrigerate for at least 4 hours. The result is a sophisticated, coffee-forward pudding with a satisfying crunch from the nibs.
