  • 3 tbsp Organic Black or White Chia Seeds
  • 1 cup Unsweetened Cashew Milk (for a buttery, shortbread-like flavor)
  • 1 tbsp Freshly Squeezed Lemon Juice
  • 1 tsp Organic Lemon Zest (finely grated)
  • 1 tsp Blue Poppy Seeds
  • 1 tsp Raw Honey or 2-3 drops Stevia (to balance the acidity)
  • 1 pinch Himalayan Pink Salt
  1. Zest & Juice: Zest the lemon before cutting it. This ensures you capture the essential oils in the skin. Squeeze the juice into a glass vessel, removing any seeds.
  2. Emulsify: Add the cashew milk, lemon zest, poppy seeds, sweetener, and salt to the lemon juice. Whisk until the honey is fully dissolved and the zest is suspended.
  3. Hydrate: Slowly whisk in the chia seeds. The acid in the lemon juice will begin to react with the chia seeds almost immediately, so stir consistently for 60 seconds.
  4. The Interval Stir: Rest for 10 minutes. Give it one final, vigorous stir to ensure the poppy seeds and zest haven't settled into a single layer.
  5. Set: Refrigerate for a minimum of 4 hours. The texture will be thick, creamy, and punctuated by the delicate "pop" of the seeds.
